We currently have over 70 sites using Mosaic invoices and we do not see performance issues amongst those over and above other functionality that requires system resources.
The benefits of using Mosaic Invoices would be that you would be able to run payment cycles and pay suppliers and bill customers on the back of the invoices in the system.
However as with everything, we do advise for thorough testing before doing so if you are a site that does not already use Mosaic Invoices.
